About the Farm and Producer
This coffee comes from Don Joel in the West Valley of Costa Rica, produced by Allan Oviedo, a second-generation coffee grower who has shaped his farm through patience and steady intention. After years of selling cherries at low prices and working outside the farm to support his family, Allan gradually reinvested into his land, eventually building his own micromill named after his father, Don Joel. Today, he manages the farm alongside his son, focusing on quality, consistency, and long-term sustainability.
 
 
SL-28 Variety and Double Washed
This lot is an SL-28 variety processed as a double washed coffee. After harvest, the cherries are depulped and carefully washed, then returned to clean water for a second stage. This additional step gently refines the coffee, helping remove any remaining residue while allowing the structure of the cup to settle and become more defined. The result is a cup that feels cleaner, more transparent, and more balanced, where each note can come through with clarity.
 
The coffee is then dried using a mechanical dryer, a method Allan has adopted to maintain consistency as weather patterns become less predictable. This controlled approach helps preserve the coffee’s clean structure and soft sweetness.
 
Originally developed in Kenya, SL-28 is known for its resilience, clarity, and expressive acidity. In Costa Rica, it takes on a softer profile, where its brightness is rounded by sweetness and a more gentle structure.
